The Famous Lilly Peanut Butter Fudge Cake


Probably my favorite cake EVER! My grandma's recipe. Chocolate + peanut butter... need I say more?

Ingredients:
Cake:
2 cups sugar
2 cups flour
1 teaspoon baking soda
1 cup butter or margarine (2 sticks)
1/4 cup cocoa
2 eggs
1 teaspoon salt
1 cup water
1/2 cup buttermilk
1 teaspoon vanilla

Topping:
1 1/2 cups creamy peanut butter
1 1/2 Tablespoons peanut oil (may substitute canola oil)

Frosting:
1/2 cup butter or margarine
1/4 cup cocoa
6 Tablespoons buttermilk
1 teaspoon vanilla
3 1/2 cups powdered sugar

Directions:
1. Combine flour, sugar, and baking soda in large mixing bowl; set aside.
2. Melt 1 cup butter or margarine in a heavy saucepan; stir in 4 Tbsp. cocoa, eggs, salt, water, and buttermilk until well blended. Cook over medium heat, stirring constantly, until mixture boils. Remove from heat and mix into flour mixture, stirring until smooth. Add 1 tsp. vanilla. Pour batter into a greased an floured 9 x 13 inch baking pan.
3. Bake at 350 degrees for 25 minutes, or until center is set. Remove from oven and cool 10 minutes.
4. Mix peanut butter and peanut or canola oil. Spread over warm cake and allow to cool completely.
5. For frosting, combine 1/2 cup butter or margarine, 1/4 cup cocoa, and buttermilk in a small saucepan. Bring to a boil over medium heat, stirring constantly. Pour over powdered sugar, whisking until smooth. Add 1 tsp. vanilla. Spread chocolate frosting over peanut butter layer on cake. Try not to eat the whole thing in one sitting.
